Great stuffed mushrooms and pumpkin starter

Important steps
  1. Cut the pumpkin in thin slices (it’s important that they all have the same thickness so they cook at the same velocity in oven, otherwise you will have some burn and others uncooked).
  2. Heat the oven at 180º degrees. Put the pumpkin slices separated on top of vegetable paper with some olive oil and black peper. Put them into the oven for about 10 min (it depends on your oven so you need to check on them).
  3. Cut the tomato and the courgette in little peaces. Cut the onion in slices.
  4. Put the onion in a frying pan with olive oil and let it cook for 5 min (you can add a little of water , this way the onion don't get burned). Then add the tomato and courgette and let it cook for more 10 min. Add some salt
  5. Take the inside of the mushroom with a spoon. Use a kitchen brush to add some olive oil around the mushroom and inside it. Cut the garlic in half and rub it around the mushroom. Put it in the oven for 10 min. (add some salt after taking it out of the oven)
Finishing the dish
  1. Put the tomato, courgette and onion mix inside the mushroom. The crispy thin slices of pumpkin around it . And at the end add some top parmesan lovely cheese.

you can eat this as a starter or as a main dish with something else, it goes perfect with some tasty meat.
